The principle of supercritical extraction separation process is to use the relationship between the dissolution capacity of supercritical fluid and its density, that is, to use the influence of pressure and temperature on the dissolution energy of supercritical fluid. In the supercritical state, the supercritical fluid is contacted with the substance to be separated, so that it selectively extracts the components of polarity, boiling point and molecular weight in turn.

According to the research data, 140 components of peppermint essential oil can be separated by steam distillation, and 82 compounds can be identified. Organic solvent extraction method was used to extract peppermint essential oil. 62 components were separated and 44 compounds were identified. Seventy components were obtained by supercritical extraction and 61 compounds were identified.

The main active components of peppermint essential oil were menthol and menthol, the relative contents of which were 17.03% and 14.49%, 6.17% and 6.57%, 10.17% and 12.48%, respectively, in the peppermint oil extracted by steam distillation, organic solvent extraction and supercritical carbon dioxide extraction.
